Made these stuffed rice balls the other night – Italian arborio rice stuffed with homemade ragu, and then FRIED!  Wasn’t the fastest, so better for a weekend meal for me, but the tender rice with crispy outside and savory filling was a big winner. I’m still thinking about them a day later.  I feel like I need to get Lidia’s Italian-American Kitchen cookbook now — got this recipe from the recipe featured on epicurious.com — that site has saved me countless times when in need of meal planning inspiration!  http://www.epicurious.com/recipes/food/views/Stuffed-Rice-Balls-355920
